About the workshop

Fun fact: In Japan, becoming a true itamae (sushi chef) takes at least 10 years of training and apprenticeship. In the first few years, you have to prove your loyalty by supporting the kitchen crew. You are not allowed to prepare rice, or touch fish, or interact with the final product in any way!

That all changes in this intensive course. Over a period of 10 days, you will be exposed to the different types of ingredients and methods in preparing signature sushi, sashimi and washoku (Japanese cuisine) dishes. You'll receive demonstrations, lectures, hands-on experiences and even practice at a real sushi counter!

Great for those looking to improve their skills in Japanese cuisine and those aiming to shift up their ladder in the kitchen, this international sushi chef course might not be an apprenticeship under an itamae, but it will enable you to gain in-depth proficiency that you cannot gain anywhere else.

What you will experience

Classes will be held everyday in a 2-part structure from 10AM to 4PM with a lunch break in between (no classes on Sundays).

In the 1st week, you will learn how to prepare sushi ingredients*, basic techniques in sushi-making and master washoku menu preparation techniques. (*Ingredients may change depending on supplier and season)

In the 2nd week, students will learn techniques for Makizushi, other Japanese ingredients and review on the first week's training. Students will prepare a sushi platter for grading on the 9th day and end off with practical training at a real sushi counter!

A certificate will be issued upon completion of the course, provided that attendance and grade requirements have been met :)

Other Details

Fee includes enrolment fee (non-refundable) and professional chef's uniform. Accommodation and set of 2 Japanese kitchen knives (to be purchased at school) are not included.

Please wear long pants and comfortable covered shoes since you will be on your feet a lot.
